Hello everyone! This is my first food entry and I hope to keep making more of these entries. Many of my cooking entries will probably be vegetarian dishes because, well, I’m a newbie on the vegetarian scene. Hopefully I make something that will tickle your fancy. =] When I’m not writing about things I’m making, I might do restaurant reviews as well!
First up is a simple dish that turns a side veggie into the main star! What I made is some roasted asparagus and grape tomatoes with a side of rice. I always liked asparagus and thought about how to make it something substantial. So I threw a few things together and BAM! Something that was nutritious and quite filling.
1 bunch of fresh asparagus
12 grape tomatoes
1 cup of cooked rice
Fresh garlic cloves
Preheat your oven to about 375-400°. In a pyrex pan, combine your asparagus, halved grape tomatoes and smashed garlic cloves. Dress everything with olive oil, salt and pepper, and combine it so everything’s coated. Throw in the oven for about 20-30 minutes. That’s it!
While the asparagus is roasting, prepare your rice (you can use white or brown, whichever you like). Make as much or as little as you want, but a cup of cooked rice is a nice portion for this dish. Before you add your rice to the boiling water, throw in some salt to flavor the rice. When you added the rice, toss in some parsley to make it a little more vibrant. Let the rice do it’s thing and fluff with a fork when done.
Now that the asparagus and rice are cooked, plate it up! I like to add a little tomato sauce to put on my asparagus, which is a nice balance to the wonderful asparagus. I just take some sauce and add basil, oregano and a smidge of dried jalapeño for some heat. Heat and pour a little over the asparagus!
