Can’t lie, I stole this idea from Chipotle, whose burrito bowls are so damn delicious. Because it’s kind of ridiculous to spend 7$ per heavenly bowl, I tried to make my own in order to save a little bit of money. It tasted pretty good, so I decided to share with you guys what I did.
1 green bell pepper
1 red onion
1 can of corn (or just cut off the kernals from a fresh ear)
1 can of black beans
2 cups of cooked rice (or however much you’d like)
First, slice up your pepper and onion and throw them into a searing hot pan and season with salt and pepper. Because they will cook up quickly, don’t wait too long to add your corn. Let it all chill together until everything has some good charring on it. Then heat up your beans in another pan and add 1 tbsp of cumin. Let the beans heat through.
Time to plate! In any bowl, put your cooked rice in followed by good amount of the black beans and the veggies and corn. Add some of your favorite salsa, cheese, and other toppings and you’re good to go! A Chipotle veggie bowl you can make anytime, and made just as quickly as they do it. Happy eating. =]
